I love cooking. I remember a time where the most important thing to me was what I was gonna make for dinner. I love everything about food, and I LOVE to eat it.One day while in a crunch for time I was trying to think of something for dinner, I had chicken breast. There is so much you can do with chicken breast, but I wanted something I hadn't done before. I thought about what I had on hand, and I thought, Pesto! But I didn't have any pine nuts, only Pistachios. I thought, well, that can't be too much of a difference, and I decided to try it out. I had grown a very large basil plant outside that needed to be used, and Pesto's became my new best friend.
- 1 cup Basil
- 1/2 cup to 3/4 cup Pistachios
- 1/2 cup Parmesan cheese, grated
- 1/2 cup olive oil
- salt and pepper to taste
In a blender or food processor add basil, pistachios, salt, pepper, and Parmesan cheese. Turn on blend setting and slowly pour in olive oil. Mixture should become loose and creamy. Taste and add salt and pepper if needed.
I served this over chicken breast, with fresh steamed green beans, and a ricotta mozzarella stuffed roasted tomato.

Again, I am sorry for the lack of posts, I use to post every single day it seemed and now I am slacking, I feel so out of it, I even redesigned things around here and am not content with it's outcome. I feel like I have lost all creativity skills. I am in some sort of funk, maybe it's the stress in my daily life that has me so out of it, I am determined to get this blog back to where it was, I am missing out on so much :( I don't mean to just post blog hops, I hate that and that's not why I blog, but lately I just haven't been able to come up with anything! I hope this goes away soon.
